*Happy 11th Birthday Sister!!* Have some Reese’s Peanutbutter Cupcakes!!

August 3, 2011 by Amanda R DeWitt

Happy Birthday to my sister!

She turned ELEVEN Saturday and we celebrated last night at our usual birthday-spot-pizza-place.  And FYI just since you’re at a pizza place, doesn’t mean you have to go crazy and eat five slices…I had a salad and carrots from the salad bar before having a slice of pizza and a yummy cupcake and felt quite satisfied.

I seriously can’t believe my baby sis is eleven.

I remember when she was born…

I was twelve when she was born so I remember it all!

We were watching a movie one night and all of a sudden I noticed my mom kept turning the clock on the television on (today I’m not sure how she was doing that or if maybe we were watching a tape and that was a feature on the tape player?).  My mom was timing her contractions.

Soon we were at the hospital and the doctor was telling my mom that she was not dilated enough which meant she could either go home or walk around to try to get my little sister to come out.  I remember walking up and down the hall with my mom and little brother…hoping that my little sister would be coming soon.  I already had a younger sister and a younger brother but I had prayed and prayed and prayed for another baby sibling.  I remember I remember the pictures on the hospital walls…some of those weird ones with babies in fruit baskets and a painting with a Monet style garden and a little girl walking through the flowers.  Weird the stuff you remember huh?

I ended up falling asleep in the waiting room and we were blessed with my youngest sister early in the morning.  She was almost 9 pounds so a pretty big baby, but she seemed so tiny to me!  She is now just as tall as me and we can share clothes…CRAZY.

Back to last night…

I knew I wanted to make peanut butter cupcakes.  I also knew I had a bunch of homework due yesterday so I wasn’t going to make anything from scratch.  So I went halvsies.  (that’s a word…look it up.  Or watch The Office)

Easy Reesey Cupcakes {Print Recipe}

Ingredients:

  • Chocolate Cake Mix (plus necessary ingredients such as eggs, oil, etc.)
  • 1 Bag of miniature Reese’s
  • 1 King Size Reese’s (or 4 large Reese’s)–refrigerate for easier handling
  • 1 container vanilla frosting
  • 1/2 Cup Peanut butter

How To:

  1. Prepare chocolate cake mix according to the box.  Pour into cupcake liners.
  2. Bake cupcakes halfway.
  3. Push one mini Reese’s cup into each cupcake.
  4. Finish baking.
  5. Let cool one hour before frosting.
  6. Prepare frosting:
    1. Combine vanilla frosting with 1/2 Cup peanutbutter (more or less to taste).
    2. Chop cold Reese’s (from king size) into as small of pieces as possible and add to frosting.
    3. Put frosting into a pastry bag or a ziplock bag and cut the tip off.
    4. Frost cupcakes and garnish with half of a mini Reese’s cup.

What??  I got hungry!

The messiest frosting experience ever…but oh so worth it!

Enjoy the yummyness!!  I had someone at the pizza place ask me if I got the cupcakes from a nearby and very popular cupcake spot .  I couldn’t stop grinning at the compliment! 🙂 🙂

(UPDATE: This cupcake spot is called Jones Brothers and WON Cupcake Wars!!  Great compliment indeed!)

Aaaand out of left field:

Need help on this very small issue but nonetheless an issue I’ve been debating a few months…

I still haven’t decided if I want to share pictures of myself and my family and friends on this blog…any bloggers have any comfort for me?  I always seem to have pictures that go with my blog post and I don’t share them because I’m afraid of creepy stalkers…am I being too paranoid?  I notice other people share a lot of info about themselves, but I’m just not sure about doing that.

Have a happy, semi-healthy, blessed day!
