I had sister Rachel come over last weekend for cookie making and it of course turned into so much more, as cookie making often does. I introduced her to 30 Rock (finally) and we also took a walk in the beautiful spring air where we found some giant hay bales which we obviously had to climb.
Speaking of shenanigans, because Rachel was messing around and acting like she was going to roll giant cookie dough balls…I decided I did in fact want to do a giant cookie.
Out came the skillet and we baked up a ginormous yummy skillet cookie.
Semi-healthy note: when you use cast iron skillets, you actually get some of that iron in the food you’re making. Bonus!

I think this is partly why cookies are my favorite. I associate making cookies with warm cozy memories with family and friends. I love making cookies for people because it’s one of those things that I’ve always been good at (thanks to Mama Sue for starting us at a young age cracking eggs and rolling the most over rolled cookie dough balls ever). And everyone knows that a homemade cookie can solve just about anything. 😉
I’ve also used them many a time to make new friends (something I have a hard time doing) because everyone loves cookies, right??

One setback cookie making has is that you can get a lot of dishes/utensils messy from measuring everything out. And then inevitably you will have forgotten you are out of sugar or flour. (Or is that just me?) That’s why these mason jar cookie mixes come in so handy! All you need is an egg and a stick of butter. Plus a cute mason jar cookie mix you can find at Target or from the official website here.
3 Ingredient Festive Skillet Cookie*
*recipe names are hard.
Ingredients:
1 Mason Jar Cookie Mix
1 stick of butter
1 egg
How To:
Preheat oven to 350 degrees F.
Melt the butter in a microwave safe bowl at 20-30 second intervals until liquidy. Let stand for about 5 minutes (slash while you mix the cookie mix).
Pour the Mason Jar Cookie Mix into a mixing bowl to break up the mix. The brown sugar tends to clump, but that’s totally natural and why you need to mix the dry ingredients together before mixing with the wet ingredients (like I discovered my first time making them when I deviated from the set directions on the jar).
Add melted butter to dry mix along with one egg. Mix together thouroughly.
Put your giant glob of cookie dough into your greased cast iron skillet, pressing it down and making sure it’s even in thickness all around.
Bake for 25-30 minutes at 350 degrees F or until the edges are slightly golden brown and a toothpick comes out clean.
Note: you might have to go in with your hands. Make sure they are clean of course. 😉

The colors in this cookie cake alone are so lovely! I really enjoy baking things in a cast iron skillet. It feels more authentic and old-timey. For some reason, I see the recipe as more delicious this way, too. 🙂 I would like to try the Celebrate! or the Berries n’ Chocolate cookie mixes.

How can I choose just one?! I would love to try some of the brownie mixes but I also love the colors of the chocolate and sprinkles in this mix. Perfect for Easter! I love my cast iron skillets but I don’t think they are seasoned enough yet because I still get a metallic taste when I leave something in them or bake with them.

Yeah I wonder if they aren’t seasoned? I’ve never tasted anything metallic. You can Google how to season them and make sure you DON’T clean them with water or soap! I clean mine with oil, sea salt (a natural antiseptic) and a paper towel. Sounds super weird but that’s cast iron for ya! 🙂
