Ever been to Chipotle? When we moved to the twin cities, there was one right across the street so we may or may not have gone about once a week for a year. I got totally hooked on their burrito bowl so I decided to make my own at home!
This recipe is quick, flavorful and satisfying. You can also tweak it in a million ways to mix it up or just make it your own! But if you’re like me, the bacon will probably always be in the burrito bowl mix. Because…bacon.
I have a confession (besides eating copious amounts of Chipotle in Minnesota): I don’t make dinner from scratch every night. Shocker, right? I suppose those of you who have been around awhile might have gathered this, but I feel the need to get it out there nonetheless.
Truly, I only make one or two from scratch dishes a week. Sometimes less. I make a batch of something that will last me (and sometimes Dave if he comes over to eat) for most of my dinners throughout the week and the rest of my meals consist of things like PB toast, smoothies, quick sandwiches or wraps and cereal/oatmeal. And pizza. I do love pizza.
A couple of weeks ago I was feeling like I was in a serious pizza-all-the-time rut and needed to mix it up a little. That’s when I saw all these amazing burrito bowl recipes on Pinterest. After I wiped the drool off of my keyboard (and pinned a bunch of burrito bowl pictures to my dinner ideas board), I made a resolution to get some supplies at the store to whip up a burrito bowl or two.
I already had some bacon made for my fabulous fire roasted tomato + bacon hummus (which seems to be quite popular for gals cooking for their men according to the comments..), so I thought that had to be a part of it. I also remember the beans at Chipotle used to have bacon in them, so it seemed quite fitting. Then there were the fire roasted tomatoes to be used up as well. (<-seriously addicted)
I also had some of the fire roasted tomato + bacon hummus itself and thought…why not add it?? I was originally going to make some guacamole since that’s a tad more normal for a burrito bowl, but I like to use what I have in the house when whipping up meals. I absolutely hate throwing out food because I didn’t make it a priority to use it before I went out and bought more groceries.
So of course you can add whatever you want to your own burrito bowl, but I will share what I put in mine.
Homemade Bacon + Beef Burrito Bowl Recipe (for two)
[Gluten Free, Dairy Free, Egg Free, Nut Free]
Ingredients:
Rice, cooked (I used jasmine for my burrito bowl and brown rice for Dave’s. both were delish)
Browned Hamburger (with chipotle seasoning)
Fire Roasted Tomatoes
Bacon (I used Applewood Smoked)
Spinach, torn
Avocado
Fire roasted tomato + bacon hummus
Yellow peppers, diced
Other Ingredient Ideas:
-Beans (I figured there were beans in my hummus so I didn’t need to use extra)
-Guacamole
-Cheese (how did I not add cheese?? I suppose without it, this makes my recipe dairy free!)
How To:
1. Scoop prepared rice into two bowls.
2. Layer browned hamburger on top of each.
3. Add desired toppings. Enjoy!

Using the leftovers:
Since you may have made enough toppings for more than two bowls, you might have leftovers..which is never a bad thing, right?? I used mine on top of a salad with some crushed tortilla chips, but you could also throw them into a wrap!
Make it Vegan:
Just take out the ground hamburger and bacon and sub for the beans of your choice! (and don’t add cheese)
Make it Paleo:
Omit the rice. (and don’t add cheese)
