These super simple homemade baked tortilla chips are a perfect spicy snack to toast up and bring to your next summer shindig. They’re even semi-healthy! 😉
You know how when you travel a lot and you don’t have much in the fridge and you don’t want to go to the store to stock up because you’re leaving in a few days…?
Or you’re just too lazy to go to the store? (<-ahem that’s NEVER happened to me….)
Welp, that’s how these tasty homemade baked chips came about.
Dave and I eat tortilla chips like crazy. Like a family sized bag per week crazy.
I won’t say it’s a terrible thing or a good thing. I mean we use them for scooping up healthy things like guacamole, hummus or cottage cheese (okay, the cottage cheese thing is me because Dave can’t stand the stuff—weirdo.). They also come in handy for adding some crunch to whatever dish is in front of us from chili to a chicken and spinach salad. So it’s a semi-healthy thing, really.
One Saturday I was craving a tasty snack of cottage cheese and tortilla chips. You could imagine my horror when I opened the cupboard and it was void of my favorite crunchy companions.
I sulked a little bit trying to think of what else would make a good snack, until I saw the tortillas in my fridge and got an idea.

This is so simple and I will definitely be making these bad boys again if not for myself, for the next summer get together I attend. I mean, I don’t have to tell everyone how easy they were to make…just let them be super impressed that I made homemade tortilla chips!!

I baked these in the toaster oven set to 400 degrees F, but to make a larger batch, you might have to use the regular oven (so you would have to add on a few minutes for pre-heating time).
All you do is cut the tortilla into “chips,” spray each chip with cooking spray on the front and back, then shake some tasty seasoning and a touch of sea salt onto each side. Bake them for five minutes on each side and you’re good to go!
Bada-bing-bada-yum.

In Other life News…
It turns out we don’t have an apartment to move into now in Omaha. Gah.
The apartment we thought we were getting fell through and apparently since we never put down a deposit, a similar one is 100 bucks more per month. (I feel like apartment renting has gotten tricker and tricker over the years, or is that just me? This makes me super nervous for buying a house!)
The alternate apartment is renovated though with gorgeous wood floors…but still. $1200 extra for the year for a prettier apartment?? Probably not the best decision, though. Especially knowing that Dave doesn’t quite have a new job yet? (<-I know he will find one soon, he has great experience and I’m pretty positive he’s awesome at interviewing [he’s an extroverted engineer, which is super rare!], it’s just crossing our fingers it will be soon enough so I don’t have to pay for this place by myself!)
I almost want to pay it just to make sure we have a place to move into when we get back! (of course we wouldn’t be homeless or anything, but I really hate imposing on family)
I’m also weirdly excited that there is a duck pond on the property, close proximity to a lake (which reminds me of Minnesota!)…and there is awesome lighting in the kitchen (unlike our current apartment) which will make foodie photography a tad easier. Priorities, right?
Okay, done venting.
I’m off to get a snack because thinking about these chips is making me hungry! And figure out something to wear to see Emily Kinney (aka Beth from The Walking Dead!!) in concert tomorrow! Like an outfit that doesn’t involve workout capris, maybe?

I’ve made homemade tortilla chips before, and for some reason they blew my husband’s mind. Like, what did you think you were doing when you put your own tortillas in the oven, you doofus? Boys. And any time lime is involved is a good time by me.
Sorry to hear about your apartmenting woes. I agree–I’m in real estate, and apartment hunting is both so much easier and so much more difficult than before. And not only that, but each city can be so different as well. SHAKE OF THE FIST

I think we might just look for a house instead. The kind of money you pay for a decent apartment is kind of ridiculous in comparison to mortgage payments in our area! Props for you for working in the industry because I’m sure it is frustrating to have to deal with all that ish all the time!!
