Happy Monday, friends! I cannot believe it’s time for another Inspire Me Monday link-up.
Weekend Fun
This weekend flew right by and was full of family and friends as well as good food and drinks. That sounds super cheesy, but it’s true.
Friday Dave and I met some friends at Chili’s in Nebraska where we had margaritas and their table side guacamole. They literally come to your table and make the guac there. I felt so fancy.
Saturday we were able to drive to Kansas City for my little brother’s housewarming party. Him and his boyfriend are both engineers, so you can imagine how amazing his house is. I joked that they are living in a castle.
They made some amazing hummus: a sundried tomato hummus, roasted red pepper hummus and a tasty jalapeño hummus. Of course I liked the little labels the best.

I brought my brother some dry red wine, but my taste isn’t quite so sophisticated yet. I brought the sweetest little four-pack of pink bubbly moscato for myself (and sister and mom who share my sweeter taste). I swear I’m working towards the red wines…just not quite yet.
We had a great time and I’m super happy (slash jealous of) for my little bro!
Sunday we were back in Nebraska for Mother’s Day and I had this idea in my head that we needed to make some chocolate covered strawberries. I had seen them while I was surfing Instagram (that’s a thing, right?) not once, but twice and became obsessed with the idea. Not that chocolate covered strawberries are a new thing…I just got really excited to try it!
Instagram-Inspired Chocolate Covered Strawberries
I rounded up my sisters and we proceeded to make a huge mess of almond bark, fruit and sprinkles in my dad’s kitchen (much to his dismay). And some of the berries even turned out alright.
They are super simple to make, if not a little time consuming. Just follow the directions on the almond bark to melt it, rinse and pat the berries dry and get to dipping and decorating! Waxed paper is also handy to let the almond bark/chocolate dry on.

They were a hit with Mama Sue and Grandma K. And my adorable nephew.

You are so welcome! I think it’s an issue that affects a lot of parents nowadays. I see it a lot in a close family member and it’s painful to watch. Thankfully my parents are somewhat the opposite and don’t even give advice unless we ask!

What an awesome weekend! I love all the different types of hummus. Very inspiring. YUM! And, what a fun treat to prepare with your fam, that seems like half of the fun or even more than half. Though, it would be really hard not to lick my fingers too often when dipping. Eeek! I could do it though, for germ-free purposes. Haha. Thanks for the great ideas. Take care!

The tastiest part was that the almond bark dried on a couple of the spoons and I put that in my coffee the next morning…oh my yummm!!
