Alternate title: Nuked Frittatas.
I know you guys might think I’m nuts, but microwaved eggs are actually a super quick, healthy and delicious way to whip up a meal!
Fun fact: my first blog post ever featured microwaved eggs or a sort of microwaved egg sandwich. Although the pictures in that post (from over 4 years ago!) are cringe-worthy, I stand by the fact that microwaved eggs are amazing.

The texture is a cross between scrambled eggs and hard-boiled eggs. Or if you regularly bake your eggs or make frittatas..it’s like that.
Microwaved eggs usually come about for me when I need food NOW and/or I’m eating by my lonesome because they really are fast. They also come in handy when you don’t have a whole lot of food in the fridge and don’t want to buy any more since you’re traveling back to Nebraska for the second time this month and you need to use up the rest of the veggies and potatoes. Not that this has happened to me recently.
Oh wait.
Did I mention I’m currently back in Nebraska? Like we were in Nebraska last weekend for Thanksgiving, arrived back in Minnesota Sunday and got back in the car three days later for Dave’s family’s Christmas shenanigans. Sometimes you just gotta go with it, right? Driving 12-14 hours in one weekend kind of stinks, but family is important!
So anyways, if you want to use up some leftovers from the fridge, mix them in a bowl with some eggs and throw that in the microwave! Boom!
This time I had some red potatoes with chipotle seasoning to use up along with some spinach. My mouth is watering just thinking about the perfect hot bite of spicy potato, chipotle, lime and mozzarella sausage and egg with a hint of green (semi-healthy right??).
PS I experimented a little with some artificial lighting because the tremendous decrease in sunlight lately has been driving me bonkers. Waiting for the perfect day/light to photograph food in gets a little old, so I think it’s good to have a back-up plan, yes?
I may have been slightly freaking out about it for a specific zesty crockpot snack mix recipe I had to have on the blog by a certain time and eventually realized I already had “daylight” light bulbs AND Dave’s light on his nightstand is kind of perfect as a diffuser. What do we think?

I’m super impressed by this pics especially knowing daylight wasn’t a factor. I bought some clip on lamps from the hardware store and daylight bulbs for the same reason. Now I have to figure out how to use them. Eep.

Thanks, lady! I was too! And that was literally the only light on in the apartment!
I think part of the key is figuring out how to diffuse the light…most methods scare me though because I’m paranoid the paper or cloth is going to catch fire!

I used to eat microwave eggs at work all the time until my coworker complained about the smell. I love them though so I might sneak them back into the rotation soon!
