Good morning lovely friends! You know this week I thought I was going to have posts every day like boom-boom-boom and you would all be dazzled with my clever words and delicious eats, but something always seemed to get in the way. That’s life though, right?
And it’s not like there was a whole lot more of life this week..more like I just needed some time away from the blogosphere. Some time to disappear into Sims land maybe. I honestly feel like our first snowfall of the year had something to do with it…hibernation mode is kicking in a bit!
We can talk more about this past week in my next ::Happy Things:: post though (it’s coming..I have it all written in my head!) because now it’s time to talk about this ridiculously easy, ridiculously tasty taco chili! And its cute little corn muffins friends! I mean I teased you enough about it on the blog and social media!
The inspiration for this definitely came from ::Pinterest::. It was one of those things that I saw over and over (including this tasty taco chili recipe pinned to my gluten free group board) and I kept thinking about it and thinking about it until one day I was all like “must. have. TACO CHILI!”
And once I had it, I pretty much devoured the whole thing by myself. There was that awkward moment where I was telling Dave how fast we ate the Chili and he says, “I only had two bowls..”
Not sorry at all though. Ya snooze ya lose around here! It was so delicious! And the perfect thing to eat now that it’s all snowy and cold out. Can I just say that I’m not quite ready for another Minnesota winter?
I mean it will be alright with hot bowls of taco chili and lots of baking of things like ::Banana Funfetti Protein Cookies::, but man I got uber depressed for a couple of months there last winter! Then the snow on the ground just became a normal thing and it even felt weird when it all melted away..like not normal. That’s the frozen tundra of Minnesota for ya!
Back to the eats. My take on taco chili was pretty simple. I looked a bit at my standby Crockpot Chili recipe and kind of used what I had on hand plus a good dose of taco seasoning.
I’m not really sure if it’s a requirement in general of crockpot recipes to brown the turkey first…but I definitely do. I do know that you can put raw chicken in and have that cook right in the crockpot (like with my Chipotle Crockpot Chicken Chili), but with ground meat it just weirds me out. So in this crockpot recipe, you do have to use a frying pan to brown the meat and you might as well get some of the veggies started cooking while you’re at it. This is why you don’t have to cook it as long in the crockpot, but you can cook it awhile since it’s chili and it get more delicious when it’s cooked low and slow. 🙂

And don’t forget about the corn-filled corn muffins. That taco chili and these corn muffins are quite possibly a pair made in heaven. Thank you heaven for transferring that idea into my brain.
Or maybe I should thank Dave’s mom who went on a shopping trip one day while we were in Omaha and picked up a box of Famous Dave’s Corn Bread Mix. I got super excited to make corn bread for the first time and then I saw how much sugar was in the box…eek! I decided I needed to make it a liiittle healthier so threw in a whole can of Mexicorn (yes. that’s really what it’s called.) to add in some veggies.

Ya snooze, ya lose indeed! I have busted out my crock pot and I love it. I use it daily for the next day’s meals all the time and you haven’t lived till you try CHOCOLATE chili, I tell you. Recipe come up on my blog 🙂

I cannot even think about the cold… However, in a week I will be in 30 degree and below weather! I haven’t felt that cold in awhile, I am not sure I even have clothing that will keep me warm in that! LOL! And then for XMAS – UGH….. NEGATIVE 16 ! 🙁
