Sweet + Spicy Burger with Chipotle Hummus Recipe

How is your week going? Mine is weird and a tad frustrating, but what else is new?

Like I spent the majority of Wednesday morning working on a couple of blog things only to find out that one of them makes it so I can’t write a post. Super weird and disappointing. Like when I tried to install Ziplist and it wouldn’t let me post. A plugin is no good if you can’t create content, amiright?

Welp, like I said in my last post, I had a very relaxing 4th of July weekend. It also involved eating (many) burgers!

I got home from yoga on Thursday and was ravenous. I flew home and whipped out a burger patty I’d bought the day before (yep, I’m that lazy. the patty was already formed for me.) and threw it on the grill. AKA a stove-top pan since we live in an apartment without a patio. I suppose I could have run down three flights of stairs, across the street to our communal grill…but…that seemed like a whole lot of work.

I also could have used the actual cast iron stove-top grill thing we bought last year, but it was such a pain to clean I threw it out in a fit of anger one night. True story. Sorry, Dave.

Luckily I grew up without a grill, so I knew burgers actually can be made in a pan.

Another item I snagged from the store was a bag of hawaiian burger buns. Oh. my. gosh. My grandma recently started buying hawaiian rolls for the holiday meals and they are so sweet, soft and delightful…just like the buns I snagged!

The hummus part of this burger was actually made a couple of weeks ago during a late-night Orange is the New Black binge. We make a roasted red pepper hummus at work, so I wanted to try out something similar at home. I had a couple of chipotle peppers in adobo sauce leftover from my chipotle craze over the winter.

You can do so many things with this hummus like use it as a dip for veggies and chips or spread it on a wrap. Or a burger!

Combine the sweet hawaiian rolls with some spicy chipotle hummus, a well-seasoned burger and some jalepeno jack cheese and you have an amazing burger. If you have a patio, you can grab your burger and eat it outside in true summer fashion. Or you can be like me and pretend you are eating outside.

Or go to your local coffee shop and drink a chilled coffee outside after your burger to feel summery.

Yum. I ate two of these bad boys over the weekend. 

Tip if you are grilling this up in a pan:

Use very lean ground beef so that you won’t have to drain the pan. Also make sure to spray a little pam on the pan. I may have forgotten that on my first burger.

    oooooh yummy! Sounds delicious, I could definitely use that hummus in a number of things. I love making hummus now, and it is so good for runners as recovery fuel with all its nutrients. Pinning now!

    I never make my own hummus, but it really does seem so easy! I need to try this chipotle one!

      Oh yeah it’s not too bad! Make a giant batch and it will last awhile! Mine was still good two weeks later!
