Alternate title: Green Eggs on Toast
I know I am supposed to be studying NASM…but would you guess I’m ahead of schedule? I know, I wouldn’t have guessed that either with my freaking out over the past couple of weeks. I even downloaded some apps to help me study, but more on that after I pass the exam! (And tomorrow’s post was already scheduled for those of you who have that motherly instinct to scold me for being on the blog when I should be studying.)
I just wanted to share a quick and oh-so-easy recipe with you folks because I liked that my dinner was so green.
We are going home this weekend! Yep, to good ol’ Nebraska where I will spend as much time as possible snuggling my nephew. I suppose I will see other family members and maybe wish my sister Courtney Happy Birthday, but I have a slight case of baby fever and since Dave won’t buy me a baby (how much can they cost…really?), I get my fix via my nephew, kiddos at the cafe, or reading blogs like Katie’s or Brittany’s.
Okay, back to my green dinner! We are going out of town, so it’s time to clean out the fridge! I was reminded via Instagram that I had boiled eggs left to eat. I decided I wanted egg salad with a spicy chipotle kick and since we had spinach left in the fridge…I threw some in for color (and then made a salad because we have plenty of spinach to go through by…tomorrow morning!).
Add a slice of hearty whole grain toast to the mix and you have a winner of a dinner. 😉
