Man oh man was today nuts! Remind me to check the weather before work, people. I failed to do that and was completely floored when I drove out of the garage into a pile of snow while fresh flakes hit my windshield.
Traffic crept along at a 5mph pace on the interstate. I was very tempted to turn around and go home after my boss told me I could stay home. I figured I was already on the road though, so better press on! It took me an hour and a half to get to work. Yikes.
We also got audited today at the cafe. The other gal working and I have only been there a total of 4 months, so it was absolutely nerve-wracking. It was the type of audit where not only the food/product/service is reviewed, but the auditor also asks each person a string of questions to make sure we know our stuff. Don’t worry, I passed my questions with flying colors thanks to reviewing a zillion possible topics last week with my boss.
One handy fact I learned last week was that there are almonds in our pesto. I had no idea. So a person with a nut allergy should NOT have any of our many items on our menu with pesto.
Then I forgot my headphones so lamely decided I didn’t want to work out at work (am I the only one who needs to listen to something while working out? especially during workout rush-hour around 5 or 6pm??).
Anyways, one of my most popular posts is I Like to Make Food at Work so I figured I had a few work food photos to share that you might all enjoy. I can’t share specific recipes of course, but hopefully these will inspire you (or at least make you drool a little).
Semi-Healthy Food Inspirations:
Huevos Wrap: refried beans, eggs, cheese, salsa, spinach (I add spinach to everything at work!)
Also we have new wraps at work that will blow up like a balloon if you don’t poke holes in them. Oops.
Omelets: usually eggs, tomatoes, spinach, avocados (oh my gosh I can’t believe I waited so long to try avocados in an omelet! perfection!); the side salad is spinach, pico de gallo and ranch (because why NOT have a side salad with breakfast?)
Ham + Turkey Wrap: Ham, turkey, lettuce, tomato, swiss cheese, pesto mayo (thank goodness I’m not allergic to nuts! I am obsessed with our pesto mayo!)
I went on a bit of a Florentine breakfast sandwich kick for about two weeks before Christmas. It was all I ate at work.
Florentine Egg Sandwich: Eggs, ham, red pepper mayo, red peppers, spinach
We prep a lot of salads for our coolers out front for a quicker lunch meal and one of them that is insanely tedious, but looks amazing is the Bistro Chicken Salad.
Bistro Chicken Salad: romaine, spinach, chicken, tomatoes, red peppers, 10 grapes (all cut in half!! seriously?!), red onions, walnuts, feta cheese
This piece of heaven was today’s creation. It was a pizza kind of day. I decided to add some pico de gallo (it’s called “salsa” at the cafe but it seems more like pico to me) to the top before throwing it in the oven and it turned out ah-ma-zing. I even recommended it to a customer later on and he said it tasted great! (The ingredients are pretty self-explanatory.)
Tomorrow might be a pizza kind of day too. We will see. I am working 10am to 8pm so I will probably be eating all kinds of food at work in those 10 hours. I bet I will meet my fitbit goals for tomorrow too! 😉

In Mexico my mom and I always split an omelet with avocado in it! So delicious! I’m not a fan of driving in the snow with my car. I had a small suv for most of my life and once I have paid off this car (and waited a few years) I’ll be going back to the small suv world for sure!
