This amazing pumpkin skillet cookie tastes just like Thanksgiving…all warm and spiced and delicious. It is simply heavenly with the cinnamon glaze drizzled on top!

Just for being you. That’s right. Not a conditional treat. Not because of what you’ve done or how you’ve acted. Just ‘cuz.
This is something we need to remind ourselves. If we don’t take care of ourselves, it’s pretty hard to care for others! I am truly grateful for the marvelous life that I have right now and that I am able to treat myself –even in the small ways!
You deserve to relax.
I had a great time hanging out with Dave and some friends that were in town on Friday and I treated myself to a margarita at Chili’s. This treat was much needed after a slightly traumatizing root canal. It. was. amazing! It was even sweet enough that I had no desire for dessert that night. (Not even the dessert below!) Saturday was pretty chill as well and Dave and I even got to sit and watch a movie together (something that hardly ever happens!).
You deserve to feel beautiful.
This weekend I shaved my legs (yep.), painted my nails with a new OPI nail polish I picked up from Target and applied a set of crest whitening strips that have been sitting in a drawer for a couple of months. The polish is already chipping due to the stress I put my hands through at work, but for a day or two I can smile (with my slightly whiter teeth) when I look down at my shiny nails.
Not that nail polish, make-up and the latest fashion pieces should define your beauty…but you deserve to take time for yourself to do whatever makes you feel pretty. And yes, sometimes that just means taking time to shave your legs. ๐
You deserve to exercise stress-free.
I took some time on Saturday to go for a walk on that crisp autumn day. I walked around the lake nearby and also to Target to get some allergy medicine (before my allergies attacked me). Since I wasn’t putting pressure on myself to run at a certain pace or to walk a certain distance, it was super relaxing and just what I needed. I even took some pictures of the lovely changing leaves in my neighborhood. Afterwards I joined Dave at the gym for some random free weight exercises and it felt awesome. Seriously, do what you love to do when you work out and it will never be a chore!
You deserve to get help.
Dave was amazing this weekend. He works crazy hours, but since he had part of a weekend off and was in some sort of cleaning mood, he vacuumed, dusted and cleaned the toilet. He also made lunch on Saturday and picked up dinner Sunday on his way home from work.
I’m not gonna lie; usually this type of thing would make me feel guilty since we’ve agreed (due to our work schedules) these things are mainly my responsibility, but this time I just enjoyed it.
I also made an appointment to see a counselor last week. I’ve dealt with anxiety and depression my whole life and after a couple of years of saying I would get help, I finally took the time to made the call. I’ve procrastinated the appointment since a small part of me has always thought I could positive-think my way out of this. Yeah, that’s not always realistic. I decided to make myself a priority and I am getting the help I need!
Last, but certainly not least…it’s okay to treat yourself to dessert!!
Pumpkin Spice Skillet Cookie with Cinnamon Glaze
It’s no secret that I’ve been slightly obsessed with pumpkin things lately..I mean I even went through the trouble of making my own pumpkin puree. I made this amazing dessert somewhat spontaneously when we had some friends in town (and I might have wanted to show off my baking skillz.)
This pumpkin spice skillet cookie dessert was said to “taste like Thanksgiving,” so I’d say I did pretty well. It turned out to be between the texture of coffee crumb cake (YUM!) and a cookie. The warm spices and the slightly crumbly texture just melts in the mouth.
What You Need:
- 1/4 cup pumpkin puree
- 1 cup slightly melted butter
- 1 egg
- 2 TBS milk (I used almond milk)
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/4 tsp all spice
- 1/4 tsp nutmeg
- 1 tsp pumpkin spice
- 1/2 tsp cinnamon
- 2 TBS butter
- 1 cup powdered sugar
- 2 TBS creamer
- 1 tsp cinnamon
How To:
- Preheat oven to 350 degrees F.
- Beat together wet ingredients.
- In a separate bowl, whisk together dry ingredients.
- Add dry ingredients to wet in 3 parts.
- Bake in skillet for 35-40 minutes, letting the skillet cool before cutting into it.
- Melt butter in a small saucepan.
- Add powdered sugar and creamer.
- Whisk until melted and a slightly runny consistency.
- Pour warm over cake or skillet cookie and enjoy!
The glaze on top just made it to die for; needless to say, it did not stay in the apartment very long! It was quite enjoyable with a hot cup of green tea.
So after drooling over those photos for a bit, think about what YOU can do to treat yourself. You deserve it!

Well maybe because if you think about it, when you are on the recipage tab on your blog, you’re really not looking at the original post, just the recipe. So maybe each recipe view doesn’t count as a pageview? I only saw a comment on Twitter about how recipage is bad for SEO (and I’m with you on not wanting to switch!) I’m not really sure though. I haven’t been able to find a better way to organize recipes, but I’ve been using BOTH yumprint (for the perty recipe look on each post) and recipage for organizing the recipe. I wish I could just magically combine them!!
