I went out of town again last weekend. I know, right? Does anyone else feel like it takes awhile to get back to normal life after being away a couple of days?
I’m pretty sure I’ve been out of town the majority of the weekends in the past three months. This leaves me feeling scatterbrained half of the week and usually tired from traveling and trying to see everyone and do everything in the span of two days. Most of the time I am traveling back to Nebraska to see family or attend weddings, so I shouldn’t really complain…
Friday started out with a visit to my friend Lee from Fit Foodie Finds (after having a semi-breakdown about how the blog conversion was going). Lee lives on the complete opposite side of the twin cities as I me, so I had a good 40 minutes to ooh and ahh over the beautiful changing leaves in Minnesota.
We had planned to take some pictures of me, but my awesome adult acne was getting me down (thank you high stress levels) and I didn’t feel up to being in front of the camera. I still wanted to hang out with Lee, so she invited me over to hang out with her and her friend for a fashion photo shoot.
After feeding me some chicken stir fry, somehow I was convinced I didn’t look awful (it was probably more mental than anything..also good lighting helps). I really love the way the pictures turned out!
I was able to use one of the pictures on my sidebar and one on my updated About page that I spent about 5 hours on yesterday (it’s hard to sum up your life and blog without writing a novel or using a thousand photos!).
After having some much needed girl time, I rushed back home to pack very last minute and Dave and I rushed out the door with our friend Chris to get on the road back to Omaha, Nebraska.
Dave and I had a banana, yogurt and granola on our way out of Minnesota, then we stopped for fast food of some sort before arriving in Nebraska. We got into town in the wee hours of 1am and I ended up passing out around 2.
Dave and I had breakfast on Saturday at Village Inn with my grandma and dad, then parted ways so I could meet my sister Courtney at the gym and Dave could do some work. I am SO PROUD of my sister who is working out regularly now and improving her eating habits to get to a healthy weight. She is actually at a lower weight than before she was pregnant with the cutest nephew in the world.
Not only does she look amazing, I can tell her self-confidence is rising.
After the gym I rushed to the Daddio’s house to get ready for the wedding that evening. Did I mention that not only did Lee feed me and take pictures of me for my blog, she also leant me a dress and necklace to wear?
The wedding food was decent…chicken and veggies with potatoes (but not as good as the food at Louis + Bailey’s wedding!)
Dave and I shared cake and I ate a whole bunch of wedding mints (they are my favorite) then headed out onto the dance floor! Okay, there may have been a couple of drinks before I got Dave out there….
Sunday I was able to eat lunch with my mom and sister Rachel at Panera before heading back to the twin cities. I got a delightful chicken noodle bread bowl that was perfect for the chilly day.
On the way I had my diet dew and some yummy salty and sweet snack mix to keep me awake to monitor the playlist and/or drive.
The tentative plan was to meet with the girls that I was supposed to run the Des Moines half marathon with Sunday, but sadly it didn’t end up happening. We still found some yummy food (after I nearly killed everyone in the car downtown). Our GPS was leading us to Panera (yeah, Dave wanted Panera even though he could have had some earlier), but when we got there it was closed! We walked around for a little bit and then found a nice man on his break who was headed for Jimmy Johns. I called him the Dave of Des Moines because he was super friendly and turned out to love Big Bang Theory. Obviously those are the only two things that define Dave.
Next to Jimmy Johns we saw something we had to check out…it was called the Fighting Burrito and the nice man told us it was like Chipotle, only better. Of course we decided we had to try that and said goodbye to our new friend. It was quite tasty and I liked the addition of toppers like chives and lime you could add that made it a little different than Chipotle.
We got back on the road and we got into the pumpkin bars I made last week. I later realized I never got a good picture of them, so that means I will just have to make them again to share them on the blog!
I seriously cannot believe it’s Wednesday already! My head is spinning with things on the to-do list, but still I can barely pull myself away from this blog because I want the formatting, layout and everything to be perfect! Speaking of which, comment below or head over to the post from earlier today to give me some feedback! I would really LOVE to stop obsessing over it!

Your pictures turned out so well–you look beautiful! And I know what you mean about weekends leaving you scatterbrained…I dont think I have been home an entire weekend since August and we wont have one until Nov 16… its crazy!
