I sat down to type up my WIAW, only to remember…it’s not Wednesday. *sigh* Good thing Jenn is amazing and is going to add my link manually…a day late!!
I might be a tad bit sleepy. You see Tuesday we made the trip to Nebraska so that Dave could go to a 7am big wig meeting at corporate. The thing about this trip was that he didn’t get off work until 7pm, we didn’t leave our city in Minnesota until 8pm, thus I arrived at the Daddio’s in a tired stupor at 3:30am.
By the time I woke up my day was half over and I spent it attempting to make peanut butter in a small inadequate blender (no peanut butter in the house–the horror),
taking a very schweaty walk, figuring out the self-timer on my phone to promote my lower back workout from Tuesday on Instagram, finding a decent lunch without having to go grocery shopping (Jimmy John’s for the win!)
and arranging and attending a dinner with my family whom I missed SO. MUCH. these past couple of weeks. (10 points for longest run-on sentence ever! With incorrect punctuation to boot!)
Then I forgot to reset my alarm this morning so I got 10 hours of sleep and woke up feeling like I had a hangover. And all I had to eat all day was cereal. I know, my life is super rough, right? I should also probably complain about how I don’t have a job or school right now…please don’t hurt me!
But seriously, I do kind of wish I could be back home (which now is Minnesota..so weird) where I had plenty of fresh food!
We enjoyed some delicious salads….with some Wholly guacamole, fresh peppers and salsa ranch.
And even some brinner!

I might be feeling a little better if I hadn’t forgotten my magnificent dessert back in Minnesota. I can almost taste it now.
Biting into the chilled dark, rich chocolate reveals a soft, sweet peanut buttery inside. The sweet, bitter chocolate and salty flavors combining to make a party for my taste buds. Darnit now I made myself drool all over my keyboard.
While I wallow in my sorrows over having forgotten my creation, you should definitely whip up some of the good stuff for yourself. Then you will surely understand my deep pain.
- 1 cup melted peanut butter
- 3/4 cup melted dark chocolate
- 2 TBS powdered, flavored cappuccino
- optional: chopped almonds and coffee bits for the top
Now I must get back to my evening with my family! Much love from Nebraska!!

We do brinner whenever I’m feeling too lazy to cook (at least once every two weeks – or maybe more), because I don’t consider omelettes cooking. Although, I think I’m just good enough at them they feel easy, you know?
Salads MUST have avocado. In the summer. All the time. Yum!
