I would just like to start out by saying Wow. Thank you. To all of the people who wrote heart felt comments on my last post Should Your Workout Leave You Sore for DAYS?
I am not used to that kind of response and I was struck by how much time it really takes to post meaningful content and have a discussion as well. When I am busy with life I can put out some posts that I just wish I had more time to work on. I am truly my own worst critic and I think I am only truly satisfied with a handful of posts I’ve put out (even though each piece of writing I put out takes me HOURS). I am blessed right now to be able to take time and respond to each and every comment.
Although I had to add a disclaimer to the end and even change it a bit, I am still very happy I was able to be honest with you all about my feelings and that those feelings resonated with some of you! (I even shared it as one of my top three post in Tina Reale’s Fit Friends guest post…check it out!) The purpose of that type of post is to get real. It’s easy to put on a smile and say “Everything is fine.” but who is that helping? I want to be able to be open here with the hope that some will be able to relate and to feel BETTER about themselves.
Does that make sense? Most of my content is about Me (it is my blog after all), but I want it to be bigger than that.
Okay onto why you are here…the food!! (More on WIAW or What I Ate Wednesday here.)
I got to take a lonnnggg drive this past weekend with Dave (the BF) to his family farm. How long of a drive? About 7 hours. That is also how long I will be driving by myself tomorrow to head back to my apartment, pack up, clean and get ready to start a new life with my man (after driving ANOTHER 7 hours)!
Anyways…(I keep getting distracted!!), we got to spend Memorial Day weekend with Dave’s family in the middle of Nebraska.
If you aren’t familiar with Nebraska, it is mostly farmland. I grew up in the “big city” (in Nebraska…there are about two of them) so my only experience with farms were on field trips or by driving through the great state and seeing all the cows and corn along each side of the interstate. I think it’s so cool that Dave grew up with a place that him and his family could retreat to. I still can’t get over how beautiful it is to wake up and look outside and see nothing but scenery…no houses or other buildings in sight!
Life is also a little different. Guns used to seriously scare me, but now I can actually shoot them. And I’m not half bad!
Breakfast tends to be whatever we can find at the farmhouse…maybe cereal or toast. The “farmhouse” is Dave’s grandpa’s old farm that him and his dad basically tore down to the bone and rebuilt. It still feels a little like roughing it to me. I’m usually the only female who stays there so that alone tells you how clean it is….also there are always plenty of bugs crawling around, but I think of it as camping.
We go on hikes and hang out in nature and everything. 😉
Lunches are usually with the grandparents. Sunday and Monday we were treated to things like chicken and runza casserole (Runza is a Nebraska fast food chain) with lots of fruit and veggies.
Subway is literally the only fast food chain in the small town, so I try to (convince the boys to) take advantage of this and eat there at least once on our stay.
Otherwise dinner at the farmhouse tends to consist of hotdogs, pizza or whatever we can find in the freezer. This time we actually had quite the tasty dinner of grilled pork loin, freshly picked asparagus and some coleslaw while we watched the very disappointing movie The Hobbit.
We were unaware that the movie was the first in a TRILOGY beccause seriously, what the heck?? It’s one book…why three movies?? Needless to say the ending wasn’t what we expected and had that unsettling feeling of a “to be continued” type of story.

Time to get moving! And by moving I mean I need to get up! I’m still at the hotel so that means this post took about 3-4 hours to put up….I’m so close to getting away from hotel internet!! I cannot wait!!

Oh my GOODNESS. When we went to see The Hobbit I had NO idea it was going to be a trilogy. Of course, what ISN’T a trilogy these days? I swear, I was reading this (fabulous, yes fabulous) young adult fiction novel and then it just…ended. I was like “WTF? Can’t anything just be in ONE PART anymore?”
