MIMM or Marvelous in my Monday is all about positivity on a day that many of us dread….Mondays. I am so happy Katie started this link-up so we can get our weeks off on the right foot!
Last week I got to hang out with Dave (the BF) over Spring Break in KC, where he was recently relocated. Well, he is still living out of a hotel….his technical home still being in Nebraska.
I was there to keep him company and was hoping to see some KC sites, but goodness he worked long hours! Out the door by 6am to make his first conference call and back to the hotel about 12 hours later…totally exhausted.
When we got back to Nebraska Saturday evening, we stopped at his parents to get my car. His mom asked me, “So what did you do while Dave was working all day?” I was a little stumped…what DID I do?
I didn’t have much of an answer for her. It’s so crazy how days can go by like the blink of an eye.
It bothered me that I didn’t really know what I did over that break, so I got to thinking.
Here is what I came up with:
Slept 8-9 hours a night. Although I was awoken around 5am each morning, I went right back to sleep after Dave left the room. I mean come on, it’s Spring Break! A time to relax and rejuvenate!
Picked up after Dave. Love him dearly, but I was joking that he was at the hotel long enough to make a mess and leave. And when you’re spending all day in a small room, you don’t want it looking like a tornado came through. 😉
Ate a lot. I am really not complaining about Dave because he works SO hard and I love to help him out…plus he paid for all of my food on the trip. I did make a stop at Wal-Mart so I wasn’t eating the (holy buckets) $14 breakfast downstairs and so that I could have a few non-restaurant meals over the week.
1. Hotel restaurant meal- Veggie burger and side salad. The veggie burger was good until I tasted just the patty and realized it tasted like straight potatoes. Weird.
2. Stocked up on snacks…pretzels, bananas for post-workout, Kashi Go Lean cereal, sunflower nuts for adding to the cereal, Special K crisps (so good…like chips, but better), Special K bars (the ones that taste kind of like poptarts…yummy bedtime snack), green decaf tea (I used the coffee maker to make hot water for bedtime tea).
3. Peanut butter and jelly on a whole wheat English muffin with a leftover side salad. Odd combo, but somehow it worked!
4. I took the chips and salsa to go when we had our one meal out at Chili’s. I chowed down half of the chips along with all of the salsa before running one of the days.
Worked out every single day. This is NOT normal for me. Usually I get 3 to 4 workouts in a week lately, if that. But the gym was pretty awesome, so I had to take advantage of it.
I even got around to cross-training on the elliptical! I know cross-training is important when training for a race, but I feel like it is a struggle enough to fit the runs in. I’m going to make more of an effort…especially with only a month and a half left of training.
Researched schools in the area. There is a possibility that Dave will be relocated permanently to KC and I like to know what all of my options are…if things happen that would motivate me to move…hopefully I will have more information on all of that soon! I did find 3 schools in the area with a dietetics program and one that also has a masters of dietetics with an internship.
Went shopping! I found a Maurice’s nearby and decided it was time to use my giftcard from Christmas.
I really need dressy pants or a skirt, so of course I walked away with only tops…
And I walked away from this CUTE blazer, immediately regretted it and bought it online this weekend.
Cleaned out my blog e-mail. It’s quite surprising to me the amount of e-mails I get on my semihealthnut yahoo account..and I’m not complaining! I remember a time when I wondered if I would ever get an e-mail there! I followed up with people that I had intended to (yikes) months ago.
I signed up for MINK Conference. MINK stands for Missouri, Iowa, Nebraska and Kansas which are all the states that are coming together for one awesome dietetics conference. I am so excited to learn all I can AND to meet new people. And it just so happens to be in KC this year…convenient, right?
I got all hot and bothered watching the news (something I do very infrequently) and wrote a very opinionated post.
I figured out how to add share buttons to each blog post. I went to the shareaholics site (clicked a link on someone’s blog) and the instructions helped me navigate, although there was some guess and check work involved. This involved work in html and I was honestly scared I was going to delete my whole blog or something…but it worked! Please share away! 🙂
I also eventually worked on the paper I had procrastinated until the end of Spring Break. I even got out of the hotel and headed to Panera for a Sierra Turkey Sandwich and their delightful Chicken Noodle Soup. Oh and to read half a dozen articles on the fetal origin hypothesis…which is actually pretty interesting to me. It basically states that an adult’s disease risk is based on pre-natal nutrition. Crazy right??
That soup hit the spot because it was super chilly and windy out towards the end of the week!
Okay, I probably could have done more, but I feel I might have had a more productive week than some students did over Spring Break…yes??

Hey, it’s your SPRING BREAK! You did a great job of getting stuff done…and at the same time, a good bit of balance/rest…sleep is gooooooood! 😉 And BRAVO for getting all those workouts in! I probably would have gotten lazy and just stayed in the room with my eyes glued to the tv or my computer! Lol
Seriously, the Sierra Turkey sandwich is my favorite at Panera! I still need to try that soup though!
That’s interesting about the adult disease risk…I might have to look some stuff up on that!

When I was first learning code I used to get freaked out when changing things on the ol blog too, but not so much anymore :).
