Hello Friends!
What’s up guys?! I felt a little disconnected from my bloggy friends the past few days, but I think it was just what the doctor ordered after my icky Chem test! You know those days where you just leave your phone and laptop and snuggle with your man and watch silly kid movies such as the Lorax and Rango because kid movies are awesome and you haven’t seen your best friend in the world in 12 days! Pure perfection!
PS You guys are so amazing and I love how supportive you all were on my last post, even though you’re most likely sick of hearing about my Chem class. I know it will be okay, but sometimes I just need to vent!
[Since Monday kind of got away from me (seriously, how is it Tuesday?), and I like to participate in MIMM or Marvelous in my Monday…I got the go ahead to do a MIMT! (Okay that looks a little like mint and now I want a Thin Mint!) Then I thought this post probably won’t be done until late Tuesday (that thing where I can’t write a quick post) so it might as well qualify for a WIAW or What I Ate Wednesday post, right? Apparently I can’t miss out on a good linky party!]
Dave (my BF and BFF) came to my apartment Friday night and we finally finished up my veggie-filled lasagna.. and my Statistics homework. It’s pretty cool having a boyfriend who is a wiz at math.
We also mowed down some banana cookie loaf, so named by Dave. (Hmm…I should probably give you those recipes sometime, huh?)
Saturday, after a super goofy breakfast fail (tried to food process 1 and 1/2 peppers with eggs and make scrambled eggs…haha WEIRD consistency!), we headed back to our hometown, which isn’t really a town, but I like calling it that. It sounds kind of grownup, right? Because I’m grown up living somewhere else than my hometown?
We got to hang out with my dad, sister Courtney and my favorite little nephew ever, Aaron at Jason’s Deli. I got my usual Amy’s Turkey-O on a croissant with chicken noodle soup.
We call my nephew Aaron Sanchez (after the chef on Food Network) and he is getting so big!
It’s amazing seeing all of his little baby expressions. I swear, he looks at me and my heart melts!
I also made it to the gym for a 3 mile run…a pretty nice progressive run if I do say so myself! It was one of those runs where I really didn’t want to leave Dave, but I knew I had to get it in at that time otherwise I wouldn’t get my long run in for the week. Gotta get those miles in for half-marathon training!
After the gym it was time to finish my leftovers and head to a friend’s zombie-themed birthday party. Of course I didn’t get any pictures…I was too busy playing a card game that brought back memories of when Dave and I were first dating and hung out with this couple…four years ago?? Time flies!
Sunday I met my mom and sister Courtney for some girl time..which of course involved more baby Aaron time.
Got my baby fix for sure this weekend!
We had lunch at Old Chicago where I had an amazing Chicken Pesto Panini with some fresh veggies on the side.
We also split a “small” cookie with icecream. Seriously this cookie was not small…oh American portions.
I managed to do a little homework at my dad’s and clean out the rest of the fridge and freezer (Seriously, you should see our freezer at the apartment now…packed. I put a warning note so that my roomie wouldn’t injure herself opening the door. Considerate, yes?)
We got invited to our friends Mike and April’s house to watch the Superbowl. I was having slight anxiety at that point about driving back home in the dark and getting back into the groove of things, so I snuck out after the Beyonce show after mentioning on Twitter that I need to learn the hair flip she does. 😉
He still gets confused when I take random pictures of him… |
I felt a little discombobulated after getting back…back to reality kind of thing. You know when you go on vacation and you get back to work and all of your work has piled up and you just want to turn around and go back to your vacation? Yeah that was my Sunday night and pretty much my entire Sunday.
It’s okay though, because I got my big to-do list made with little check boxes and I’m feeling good about this week.
It also helps that my Statistics test got moved back to next Thursday! Hooray!
Hope you all had a lovely weekend and start to the week!

If you could do anything this weekend…what would you do?
Linking up to two lovely linky parties:

I’m glad someone else in the blog world does her link up posts on the “wrong” days too! Sometimes we just can’t get around to it (especially when life and school is in full swing!)
That veggie lasagna looks fab, and if I had hair I’d want to learn that flip too!
Have a great day!
PS. Love the nephew pics! SO much fun 🙂

haha YES! My week has been so wack I keep forgetting what day it is!

Oh girl…Sunday night’s are hard even if you HAVEN’T been out of town. Discombobulation about having to actually get back to life. I start freaking out (OK, that might be a little hyperbolized, but anxiety gets a bit heightened) if I am anywhere but home by 7:00PM on a Sunday night. I swear.
Banana cookie loaf? That sounds almost like it was an accident but delicious nonetheless. 🙂 [Besides, who wants dry bread, when you could have chewy, cookie-like bread, right?]
Amanda aka Semi-Health Nut
haha I wanted to make cookie bars, but didn’t have the right pan…so it was in a loaf pan and was dubbed “cookie loaf.” Very good to me…tasted kind of doughy since I used a lot of banana. 🙂

Hmm, what would I do this weekend … fly to Kenya? Flying would take the whole weekend though. So probably not such a good plan if I want to make it to work on Monday.
I do get to see my family though, which is a good second.
We’ve got Jason’s Deli in DSM too & I’ve been meaning to try it. That sandwich looks really good!
Oh, and I so didn’t forget about learning the hair flip. Better start practicing!
Amanda aka Semi-Health Nut
haha Kenya huh?
And yes, let’s practice and show off our moves at Blend! 😉
