Semi-healthy Chocolate Chip Caramel Shortbreads

Hello Friends!

Most of my recipes on this blog aren’t revolutionary.  Tasty, but really, I am just a college gal who has a love for baking and nutrition, not a culinary genius.  Some recipes I have simply modified from other recipes, which of course I cite those sources.  This is one of those instances.

I debated on even adding this to my Recipage list of recipes, but you know what?  I use my recipe database a lot and just for my benefit, [and maybe yours ;)] I think I will file this recipe away since I will probably be making it again.

We made these cookies at the Christmas baking party (#1) and I was a little nervous because I used all whole wheat flour and not everyone enjoys the taste as much as I do.  I think they taste awesome, but of course you can always make it with plain flour.  Or a mixture of the two.  It’s up to you!! 🙂

They aren’t too sweet but they go amazingly well with a warm cup of tea.

And I think I figured out why shortbread cookies are different than regular…or at least the difference in these cookies versus the others I make.  These have powdered sugar and no eggs.  Is that what shortbread is?  (See, not a culinary genius, but learning!)

Chocolate Chip Shortbread Cookies

Ingredients (24 cookies)
  • Used the following recipe: Betty Crocker Chocolate Chip Oatmeal Shortbread Cookies
  • But use whole wheat flour instead of regular and add caramel baking bits instead of nuts.

Stay tuned for another cookie post…this time with Christmas sugar cookies!  And hot chocolate cupcakes!!  Because it’s a snow day and all I have to do is chillax in front of the fireplace and drool over food pictures on pinterest. 😉

    I love me some cookies! I went on a major baking spree yesterday (partly just because I was doing the baking for the zucchini bread my mom gives as Christmas gifts) but it was AWESOME and I have more planned for tomorrow! 🙂
