Whole Wheat Chocolate-Peanut Chip Oat Cookies

Hello Friends!

Now say this 10 times fast!

Yes, it’s a long name for a cookie, but I have so many cookie recipes that I really need to get more specific.  I wanted to name them semi-healthy delights, but will I remember what exactly that means a year from now when I’m looking for the recipe?

Yes, I do go through my own data base on this blog when I want to make something I blogged about.  In theory, the recipe is also somewhere in my house on a notecard or a scrap of paper…but seriously how awesome is it to be able to get online and type a couple of words to find a favorite recipe?

Okay, enough about one of my favorite perks to having a foodie blog!  Onto the cookies!

I mixed up some of these a couple of weekends ago (referenced these delightful cookies in my last WIAW post) and Dave and I enjoyed the dough, but I did manage to bake up a few of them on Election Day.

 

Whole Wheat Chocolate-Peanut Chip Oat Cookies

Prep Time: 5 minutes
Cook Time: 10 minutes
Keywords: bake dessert chocolate chips oatmeal whole wheat flour cookie
Ingredients (12-15 cookies)
  • 1 egg
  • 2 TBS melted butter
  • 1/4 cup brown sugar
  • 1/4 cup white sugar (sugar can be reduced in this recipe…the chocolate and peanut butter chips make the cookie plenty sweet)
  • 2/3 cup whole wheat flour
  • 1 cup quick oats (you can use old fashioned, but the texture will be different)
  • 1 tsp almond extract
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 1/4 cup semi-sweet mini chocolate chips
  • 1/4 cup peanut butter baking chips
Instructions
Mix together egg, melted butter and sugars. Add oats.
In a separate bowl, mix the rest of dry ingredients except for the baking chips.
Slowly mix in dry ingredients to wet. Then add baking chips.
Refrigerate at least an hour.
Preheat oven to 350 degrees F. Bake 10 minutes and let sit on the baking sheet an extra 5 minutes then enjoy!
