So, I’ve started this series called Vegetarian Curious (see the first post and second post) and for now it’s from the perspective of wonderful guest bloggers who are sharing their vegetarian recipes and stories of how and why they are vegetarian/vegan foodies.
I decided I’d try a meat-less day and this is what I came up with. It’s not the healthiest way to go..I think I need more beans and lentils for protein, but you gotta start somewhere right? (For the record, I don’t think I will ever go fully vegetarian, but I think a meat-free day or two will help with cholesterol issues that run in my family as well as overall health.)
{Breakfast} 10am: PB&J Toast. Drinks: Diet Dew and Water.
{Pre-workout}: Water plus jelly belly workout beans.
Workout: 3 mile run with 1 mile walk. Drinks: Water and gatorade.
{Lunch/post-workout}1pm: PB&J Toast (I didn’t finish the second piece I made myself) Drinks: Water and chocolate protein shake.
{Dinner}6pm: Avocado wrap with italian cheeses and potato wedges. Drinks: Diet dew and water
{Second Dinner/late-night snack}10pm: Mixture of multigrain and peanutbutter cheerios plus a handful of peanuts and mini chocolate chips with a side of string cheese. Drinks: green tea and water.
In other news…
School is back in session and I am having a rough time getting my brain wrapped around it! I started at a university this fall after going to a community college for three years and it is SO DIFFERENT.
First of all, I have a lecture with like 200 students. Be proud of me, I spoke up in class once each day!! (In case you didn’t know, public speaking freaks me out…yes that includes from my seat.)
Secondly, I am 25 years old and all of the students seem to be, like, teenagers. (Newsflash Amanda–they probably are!)
Thirdly, HOLY MOLY driving an hour too and from class (three days a week) is kicking my butt! I think I will get used to it, but today I just wanted to curl up and sleep and let someone else do the driving in rush hour!
Lastly, I am crazy for taking two online classes when I have gotten addicted to blogging and all that it entails.
BUT I am sure I will get into a routine. It will be okay…right? 🙂

And I did hear that you have to ease yourself out if you’ve been vegetarian for that long…your digestive system needs time to get used to it! Nutrition is so fascinating!
