One thing I love about blogging about food is that I have created a database of recipes. Mostly semi-healthy baking treats. Because that is what I love to make most!
I had a craving for snicker-doodle cookies and remembered I made some lemon snicker doodle cookies for the blog awhile back. I also had some samples of NuNatural sweetener/flavoring (from my Blend swag bag), and some lemons. Usually my inspiration comes in the simplest and easiest way possible.
With a little experimenting (and A LOT) of taste-testing, I came up with a healthier version of my Lemon Snickerdoodle cookies.
I subbed the white flour for whole wheat, took out 1/2 a cup of sugar and added some Lemon NuNaturals flavoring and Vanilla NuNaturals as well. I also used the juice of one lemon, which made the cookie softer. And yummier.
Whole Wheat Lemon Snickerdoodle Cookie Recipe
Ingredients:
1 cup sugar
2 & 3/4 cup whole wheat flour
2 eggs
2 tsp cream of tartar
1 tsp baking soda
1/2 cup salted butter
7 drops lemon NuNaturals
7 drops vanilla NuNaturals
juice from one lemon
Instructions:
Cream wet ingredients together. Add dry ingredients and slowly mix.
Bake 8 minutes at 350. (for small cookies)
How Were They?
Well, my godfather told me that he usually doesn’t like lemon-y food, however he loved the cookie! Dave (the BF) got a whole bunch of them to take out of town (gosh I miss him!). He wrinkled his nose when I said they were whole wheat and then said “these are actually pretty good!” I, of course, teased him about saying the word “actually,” as if he was surprised I made a good cookie.
The thing I like about these cookies is that they are chewy, yet have a crunch on the outside from the cinnamon-sugar mixture. Drool.
