I’ve been devouring this batch of edamame and rice I made last week for three days. That’s the beauty of cooking for yourself (and yourself only)…leftovers!
I boiled a bag of frozen edamame in their shells and set it aside to cool.
Then in the same pot, I prepared some boil-in-a-bag rice, which was all too easy to make.
My sister and I laughed at the brand name of this shouting “Success!!” when the rice was finished boiling.
And when we ate the rice. And when we finished everything on our plates.
I shelled the edamame, which wasn’t really too hard, and kind of fun. When you squeeze the shell, they spew out, sometimes onto the counter, which makes those freebies that you eat right away. 😉
After adding a tablespoon or two of butter (I’m re-reading Julie and Julia which is a butter-filled book) to the rice and edamame, I added pepper and salt and voila! A delightfully simple side-dish.
Then I added some eggs to part of the leftovers this weekend. (See my Rice-A-Roni post for more details on the method.)
And lastly, today, the winner of all….did the same thing as in method #2, but also added a tablespoon of plain Chobani Greek Yogurt (P.S. Did you enter my giveaway for a whole case of the good stuff??!)

This entire post was procrastinating writing some guest posts for some amazing blogs. EEek! One of them is due tomorrow and I haven’t even started. I have a topic…but still procrastinating. Sounds like a late-night project, yes?
