I took half a dozen colorful, hard-boiled eggs off my grandma K’s hands.
I know, I’m such a sweetheart!
I hadn’t had hard-boiled eggs since I flopped trying to make them (p.s. check out that post! Made me laugh looking at it today!), then perfected the skill a couple of months ago.
But since I had grandma K’s already-boiled-eggs, how easy is it to mash them up into something delightful? I am all about turning leftovers into something awesome.
Easter Egg Wrap {Egg Salad Roll-Up}
Ingredients:
- 2 peeled hard-boiled eggs
- 1-2 TBS Sweet Baby Ray’s Sandwich Sauce
- pinch pepper
- pinch salt
- handful of spinach
- 1 small whole wheat tortilla
How To:
- Mash up eggs with a fork in a bowl.
- Add sauce, salt and pepper.
- Spread mixture onto tortilla.
- Add spinach. Add extra sauce if desired.
- Roll up and eat!
I decided to enjoy this cold wrap with some toasty warm spicy sweet potato fries for a very satisfying lunch.
Well, it’s rainy out so the 5 miles scheduled for today will probably be on the treadmill…although I’m out of town so they probably would have been anyhow.
