Let me share a story with you…
It was a lovely Saturday morning.
I had a 4 mile run planned that day.
And a lot of homework. You see, I take an online class that has a quiz due each Saturday.
So naturally I wait until the last minute to finish my studying and take said quiz. And this stuff has been hard! It’s a nutrition class, however it’s not what you think a nutrition class would be. I used to think I would just be learning how many carbs/protein/fats we should be consuming each day and calorie intake, etc. Ha! That was chapter one!
Now we get to learn about how food is digested down to the carbon atoms on glucose. Super fun eh?

Since groceries were low and I didn’t have my usual whole wheat toast and peanutbutter (gasp!), I decided to try a different breakfast.
{Breakfast}
I’ve had these vitatops in the freezer for about a month and I decided it was time to test em out.
The banana nut muffin top I had was decent..it was moist, but not very flavorful and certainly not as filling as I would like a breakfast to be. It is only 100 calories and that is definitely not sustaining enough for anyone’s breakfast. (Unless you are five years old.)
I would eat one as a healthy snack, however as they are jam-packed with vitamins. (Thus the name, vitatops.)
Since I was still hungry, I added a scrambled egg to the mix.
Aaand I was hungry yet again about 30 minutes later so I had some gingerbread biscottis. (Dip in coffee for ultimate biscotti experience.)
Semi-healthy tip: eat a full and delicious breakfast in order to stay on task while studying!
{Lunch}
Delightful leftover turkey sandwich with lettuce and sweet baby ray’s sandwich sauce on whole wheat. Side of my favorite chips of all time: southwest baked lays!
Amazingly crunchy, light and a bit of spice to add some sizzle to your meal.
{Dessert}
Fudgey Oatmeal Cookies
(I may or may not be eating some of these in the next five minutes.)
{Dinner}
I had to eat this dinner quickly. Okay I will tell you this, but you still have to feel bad for me for taking up my whole day doing homework…I got to go to a hockey game Saturday night.
As usual, I was running behind so I had to scarf this amazing dinner.
I found these fries a couple of weeks ago and have eaten them about 4 times a week since.
I bake them in my toaster oven along with the chicken for about 15 minutes. The longer you leave the fries in, the crispier they get, which is my favorite. Crunchy, chipolte, sweet potato fries.
The hockey game was pretty fun…although we lost. It was just nice to get out of the house! (Would have been nicer to run…feel sorry for me!!)
{Late Night Snack}
The night was finished off with some peanutbutter on cinnamon Attune graham crackers (more on Attune later) and piping hot bedtime tea. I sat with the BF to watch some Modern Family and he promptly fell asleep at 11pm. What a day huh?
I’m off to study more nutrition! (And look at other WIAW posts!) Have a great hump-day!
