Happy Friday Everyone!
The Daddio gave me a giftcard for the grocery store and I took that as an opportunity to buy a cart-full of food…many new items I’ve been wanting to buy. Thanks Daddio!
Due to the grocery extravaganza, I had to move some things around in my cupboards to fit all of my foodie finds. I discovered some Asian Sesame noodles (one of those side dishes in a bag) and it got my creative juices flowing.
Thus was born my
Quick Tai Food at Home Meal
Time: 25 minutes
Servings: 2
Ingredients:
- Asian Sides Thai Sesame Noodles
- Grilled chicken
- 1/2 cup peas
- 1 pepper (we used orange)
- handful of peanuts, chopped
How To:
- Get started preparing the chicken. Since this serves two, I’d estimate 6-10 ounzes of chicken (if you have a scale, otherwise you have to eyeball it). I was able to bake this particular grilled chicken in the toaster oven and it turned out very tender and juicy.
- Chop the pepper. The BF went over my chopping work because he doesn’t like big chunks of vegetables…
- Start on the tai noodles. This mix required 1 and 1/2 cup water with a drizzle of olive oil. Brink to boil, add contents of the bag.
- If the peas are frozen, like mine were, add them right away. If not, add them a couple of minutes before the end of the cook time for the noodles.
- Add the chopped pepper a couple of minutes before the end of the cook time for the noodles.
- If you’ve timed it well, you can add the chicken right away when the noodles are done cooking and give it a good stir and cover.
- Chop up some peanuts for a deliciously crunchy garnish.
Tip: For spicier tai food (we like it a little spicy) add red pepper flakes and/or a dash of spicy asian sauce. I used a little azian zing from a wing joint.
After mowing down this delightfully quick dinner (and patting myself on the back continually) we had the opportunity to attend a seminar at the local university. It was entitled, “What is Truth.” Intriguing right? It is a little hard to explain, but basically it was a few Christian guys addressing a mixed (Christian, non-Christian, other faiths) audience about why Christianity makes the most sense. It was a very logical and fact-based approach, one we don’t often hear. It was awesome.
The speaker had been thrown in jail repeatedly for his faith and was questioned and interrogated about his faith why in jail and the part that gave me chills was that he said in those desperate times..he was not alone! God was right there with him. There was a question and answer segment at the end that was amazing to listen to because I could tell there were people who did not agree with Christianity, but were definitely seeking truth.
I think we are all searching for something and we often find out that the world does not satisfy our hunger for something greater than ourselves. Some try to climb the corporate ladder in hopes that success and money will make them feel fulfilled. Some volunteer and believe that if they give back to the community, their longing to be filled will be satisfied. Others, like myself, have looked for happiness in a romantic relationship, only to find that humans are not perfect.
