Love of baking/cooking.
Love of food. Love of chocolate. Love of bbq sauce. Love of chicken.
AAaaand love of the people we’re making food for.
It’s a good thing that a couple of these factors were involved in the making of this delightful Turkey Loaf dish.
Me, the BF and BF roomie were going to have dinner together Thursday evening and watch the new episode of Community.

Have you seen this sitcom by the way? Basically about this study group of a variety of different people, because it’s a community college, who never seem to actually study but hilarity always ensues. I really wish my experience at community college resembled this tv show. And I wish I had a study group with Troy and Abed.
BF’s roomie said he was making mashed taters…and I thought we should probably have…some sort of a main course too? It was chilly out so I thought “meatloaf”. Last time I made meatloaf I used lots of fresh peppers from BF’s parent’s garden, but alas I did not have any of these available. I decided to get some celery instead and it turned out quite lovely.
Ingredients: (for one bread pan full)
- 1 pound 99% lean ground turkey because:
- 130 calories per serving
- 27 grams of protein per serving
- also used this in my lasagna recipe and it tasted great
- 2 eggs
- 1/2-3/4 cup water (makes the meatloaf jucier due to the lack of grease from the ground turkey)
- 1 cup (heaping) chopped celery
- 1/2 package stovetop stuffing (I used chicken flavored)
- 1/4 cup spicy mustard, divided
How To:
- Preheat oven to 375 degrees F
- Chop celery, set aside
- Mix all ingredients except 1/4 cup of the spicy mustard and celery.
- Mix in the celery (preferably with the hands…a little messy but effective!)
- Shape meat mixture into a non-stick or pam-sprayed bread loaf pan.
- Top with remaining spicy mustard.
- Bake one hour (check after 50 min) or until cooked (160 degrees F).
As the night went on…it was apparent the dinner and show wouldn’t be happening…5, 6 and 7pm went by and no BF. He texted he wouldn’t probably be back till 8 or 9. It’s kind of a challenge to plan things when the BF can be at work till…who knows when. Does anyone else have this issue? He travels a lot now too since he is training so I miss him so much when he’s gone. :-/ He got this job about six months ago and it is a great job with an amazing, stable company…but it can get frustrating sometimes! (Just keepin it real.)
I have been doing better with being flexible lately, but it is still an area I am working on. I did tell him next time the company wants to send him out of town they need to confirm with me. 😉
I still made the meatloaf and whipped up some instant mashed potatoes. (You have to try the baby reds…my favorite!) All I had to do was boil 2 cups of water and then add it to the mix and “fluff” with a fork. Piece of cake.
I tried to wait as long as I could but ended up eating this delish meal at about 8:30pm. The BF worked hard on the railroad till 10pm! I really don’t think some people realize how hard he works. And he’s on salary so over time pay is non-existent. But he did get to eat some din din on the train that he was traveling on…so he did not starve. 🙂
Good thing I had lots of homework to keep me busy till he got to my casa at 10:30! And a Friday Favorite Foodie Finds Post.

It was a great comfort food to have while watching a terrible NE game. :-/
And nothing beats seeing people try your food and “mmm” it! 🙂

I am off to study some Algebra…Finals tomorrow so wish me luck! And then two weeks off from classes!! What the heck am I gonna do with all my free time?? (Let’s be real…I already have a list made out of all the things I have been putting off while in school!)
