Lasagna Tastes Best with FRIENDS :-)

The BF has been traveling A LOT! 
This means he has been dining out quite frequently so I thought it would be nice to make my guy a nice home-cooked meal.

I miss his handsome face!

I decided I’d give Lasagna a go.  It’s been awhile since the last time I made it and I just couldn’t seem to get it quite how I wanted it.

Maybe it was my love that did it (you like it cheesy right?), or maybe BF’s help in the kitchen, but it turned out perfect!

This is pre-baking.  I never did get a final pic because our friends showed up and I got distracted!

Semi-Health Nut’s Lasagna (made with LOVE):

Ingredients:

  • 1 pound ground turkey (we used 99% lean…and it still tasted awesome!)
  • 3 cups spaghetti sauce (we used Prego Chunky Garden 100% natural.  New fav sauce hands down)
  • 15 oz tomato sauce
  • 1 and 3/4 cup cottage cheese (I love me some cottage cheese)
  • 1 egg
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • whole wheat lasagna noodles, uncooked
  • 4 cups shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

To Do:

  1. Heat oven to 350 degrees F.
  2. Cook meat until browned.  Remove from heat and drain.  Add spaghetti sauce and tomato sauce.
  3. In a separate bowl, mix together cottage cheese, egg, oregano and basil.
  4. Begin layering: 
    1. Place 3 pieces lasagna noodles in 13×9 inch baking dish.
    2. Spread about 2/3 cup cottage cheese mixture on noodles.
    3. Spread about 3/4 cup meat sauce mixture over that.
    4. Sprinkle about 1 cup mozzarella cheese on top.
    5. Repeat until all of cottage cheese mixture is used.  (I think we did 3 layers.)
  5. Put any remaining pasta sauce on top or around sides.  Make sure all of the pasta is covered for optimum baking texture. 
  6. Cover in aluminum foil and bake for 30 minutes at 350 degrees.
  7. Then remove foil and bake another 10 to 15 minutes.
  8. Enjoy and share with friends!

You can also enjoy with broccoli, red wine, and…a pumpkin pie sandwich.  I think the red wine may have had something to do with this decision….

Actually it probably didn’t…good times!

1 Lasagna + 3 hungry dudes + 1 Amanda + A whole pumpkin pie + 2 bottles red wine = 1 Good Night

    lol! The pumpkin pie sandwich is priceless! My husband will make a sandwich out of anything, too!
