I have the BIGGEST SWEET TOOTH!!
I think this is why I can only be called a SEMI-Health Nut!
I have a couple of summery desserts I would like to share with you. Some of them are SUPER SIMPLE which is perfect for a summer. Plus they are all semi-healthy!
First up:
Summer Squash Mashed with Brown Sugar
Recipe modified from The Novice Chef’s Mashed Acorn Squash
Ingredients:
- One Summer Squash (got mine from BF’s Parent’s house)
- 1 TBS (or more to taste) Brown Sugar
- 1 TBS butter or margarine
- Cinnamon
How To:
- Cut squash in half.
- Scoop out the seeds with a spoon (or knife or a scooper of some sort if you have one).
- Wrap in celophane and microwave for 5-7 minutes. (Weird right? The BF says his fam used to do it all the time…) Careful it will be hot!!
- Carefully scoop out squash “meat” into a bowl.
- Mash with a fork or food processor (I want one soooo badly!!)
- Add butter and most of brown sugar.
- Garnish with brown sugar on top and cinnamon!
Dairy Free Icecream, Granola & Honey
Pretty self-explanatory, but Almond Dream Icecream, Bear Naked granola (my FAVORITE GRANOLA), drizzled with honey…YUMMMM!!

Also works great with sherbet!!
And this one may have just been a weird…craving…or something:
Snickerdoodle with Peanut butter and Granola
Self-explanatory again…but I melted the peanut butter for about 20 seconds on the cookie…
oh how I love peanutbutter!!!
Now I’m off to plan what to make for the BF’s birthday party on Saturday. He turned 23 on Sunday…
