Colorful *Pepperful* Meatloaf

Ma!  The MEATLOAF!  (Wedding Crashers)

Ah meatloaf…the ultimate comfort food!  And so simple to make!

Me and the BF had lunch with the BF sister and she made some yummy meatloaf with peppers in it…so that is partly where I got my inspiration from.

Pepperful Meatloaf {Print Recipe}
Ingredients:

  • One pound ground turkey or beef
  • 1/2 package Stove Top stuffing (I use chicken)
  • 1/2 cup or LESS (I think with the peppers the recipe needs less water)
  • 1 egg, beaten
  • 1/2 cup Sweet Baby Ray’s BBQ sauce, divided
  • 1 yellow pepper
  • 1 green pepper
  • 1 red pepper (we actually ended up using only 1/2 because part of the pepper was bad)

How To:

  1. Preheat oven to 375 degrees F
  2. Dice peppers, set aside
  3. Mix all ingredients except 1/4 cup of the BBQ sauce and peppers.  (I was able to do this with just a spoon)
  4. Mix in the peppers (preferably with the hands…a little messy but effective!)
  5. Shape meat mixture into a bread loaf pan.
  6. Top with remaining BBQ sauce.
  7. Bake one hour (check after 45 min) or until cooked (160 degrees F)

Semi-healthy trick: Put bread slices on the bottom of the pan to absorb some of the fat from the meat!

I also made some yummy green bean almonds for a side!  I have had these at fancy restaurants so I thought why not?

Green beans + Almonds + little margarine + pepper = delish side dish

I made this last week and have been SO BUSY I haven’t been able to post until today!

We made taco’s Thursday at the BF’s with his roomie and roomie’s GF and then I went to a girl’s night with my favorite girlie friends. 

Friday I went for a long walk with my friend and her ADORABLE BABY girl and then I worked a fun wedding with my coffee catering company. 

I somehow found time to sleep and got up to work at the farmer’s market Saturday with the coffee catering gig (almost died of heat).  I tried to rest a bit and then went to a crazy bachelorette party where we drank out of embarrassing straws (in front of the BF’s mother by the way), rode in a pink party bus, and went to a couple of bars…and I was exhausted by the end of it!!  Seriously I’m not that old…but I really don’t party that much at all!!

Sunday I got to hang out with the BF’s family at the cabin on the lake and I went for a workout of a paddle boat “ride.”  Rushed home to do laundry for TODAY and somehow got up this morning to go back to work again! 

Oh then my car wheels went crazy on me today (the front wheels were facing the opposite direction) and I had to get a tow truck to take my poor little neon to the shop.  My lovely sis picked me up (thank GOD for her!) and now I am stuck at home.  (Maybe thank my Neon for getting this post done?)  Oh life! 

Now off to do homework!
